Loaded Mediterranean Hummus
A simple and delicious classic hummus topped with a Mediterranean flare that is perfect to serve with your favourite crackers, veggies, or pita.
- 2 15 ounce cans chickpeas
- 1/2 cup tahini
- 1/4 cup fresh lemon juice
- 1/4 cup cold water add more as needed
- 1 tbsp olive oil
- 2 cloves chopped garlic
- 1 tsp ground cumin
- 1/8 tsp cayenne
- 1 tsp Himalayan salt
Toppings
- feta cheese
- Kalamata olives or your favourite olives
- cherry tomatoes sliced
- fresh parsley
Optional Toppings
- additional chickpeas
- red peppers
- cayenne
- olive oil drizzle on top
Strain and rinse chickpeas well
In a high speed blender or food processor, add all ingredients except toppings
Blend on high speed until smooth for 1 minute
*Note: if it is too thick and is not blending well, slowly add additional cold water until desired consistency is acheived
