Loaded Mediterranean Hummus

A simple and delicious classic hummus topped with a Mediterranean flare that is perfect to serve with your favourite crackers, veggies, or pita.

Ingredients

  • 2 15 ounce cans chickpeas
  • 1/2 cup tahini
  • 1/4 cup fresh lemon juice
  • 1/4 cup cold water add more as needed
  • 1 tbsp olive oil
  • 2 cloves chopped garlic
  • 1 tsp ground cumin
  • 1/8 tsp cayenne
  • 1 tsp Himalayan salt

Toppings

  • feta cheese
  • Kalamata olives or your favourite olives
  • cherry tomatoes sliced
  • fresh parsley

Optional Toppings

  • additional chickpeas
  • red peppers
  • cayenne
  • olive oil drizzle on top

Instructions

  • Strain and rinse chickpeas well
  • In a high speed blender or food processor, add all ingredients except toppings
  • Blend on high speed until smooth for 1 minute
  • *Note: if it is too thick and is not blending well, slowly add additional cold water until desired consistency is acheived
