These Almond Crusted Chicken Tenders are flour free, gluten free, and low carb!!! They are quick and easy to make and offer a healthier alternative to traditional deep fried chicken tenders. You simply blend up almonds with a a few spices in a food processor, dip the strips in an egg whites wash, coat them with the almond mixture, and then bake them to perfection!
Gluten Free Almond Crusted Chicken Tenders
Servings 4 people
Ingredients
- 4 chicken breasts
- 1/2 cup egg whites
Almond Crust
- 1.5 cups raw unsalted almonds
- 1.5 tsp garlic powder
- 1 tsp sea salt
- 1/4 tsp Cayenne powder
- 1/4 tsp ground pepper
Instructions
- Preheat oven to 400 degrees F
- Cut chicken into strips and set aside
- Pour egg whites into a seperate bowl and set aside
- Blend almonds and spices in food procesor or high speed blender until it reaches a fine flour consistency. It is important not to over blend!
- Add almond mixture to a seperate bowl
- Dip chicken strips into the egg whites bowl and then coat with the ground almond mixture
- Place strips onto a sprayed pan and bake in the oven for 12-15 mins or no longer pink inside.
