This vegan dairy-free Strawberry Nice Cream is soo delicious and creamy! Made with just three simple ingredients and no added sugar it’s healthy enough to eat for breakfast! Frozen bananas, strawberries, and coconut milk are blended up to create a natural and good for your summertime treat.
When making this recipe you’ll want to use very ripe bananas as they are naturally sweeter. They help make it sweet enough so that you don’t have to add any additional sweetener. I also try to keep bananas and strawberries in the freezer on a regular basis so that when I am ready to make nice cream they are ready to go. The only really time consuming part of this recipe is waiting for the bananas and strawberries to freeze.
For the coconut milk, full fat is the best. It helps make the Strawberry Nice Cream super creamy! I put my can of coconut milk in the fridge so that the thick white part solidifies and stays at the top. This is what you will be adding to your blender and it makes it easier to scoop out when its solidified on top. I also make sure to save the liquid that is left over and store it in the fridge for smoothies.
This Strawberry Nice Cream recipe does not require an ice cream maker and only uses a high speed blender. It’s really easy to make and I love that it is dairy-free, has no added sugar, and is packed full of healthy whole foods. Ingredients
- 3 large ripe frozen bananas sliced
- 1 cup frozen strawberries sliced
- 1 can coconut milk scoop the thick cream from the top trying not to use too much of the liquid
Instructions
- Place the frozen banana and strawberry slices in a high-speed blender and pulse until the fruit becomes “crumb-like” and breaks up into small pieces. Add the coconut milk and blend until the mixture is smooth and creamy. You may need to push the mixture back down several times until this happens.
- Scoop the that mixture into a bowl. Scoop into dishes and serve immediately. If the mixture is too soft, place into the freezer for an hour to until it reaches the desired consistency.
