This Rosé Spritz is light, refreshing and full of juicy citrus flavour. It’s a spin on the classic Aperol Spritz and is super simple to make, yet sophisticated enough to serve at your summer soirée. Made with sparkling Rosé, Aperol, soda water, and a touch of honey simple syrup this cocktail is like summer in a glass. It’s not only delicious and easy to drink, it’s also really pretty to look at!
I had a chance to visit Okanagan Crush Pad, a custom crush winery in Summerland, BC for the first time with some girlfriends last weekend. They offer a variety of wine flights table-side and we tried the Weekend Bubbles which provides six different sparkling wines including a vintage bubble that has been ageing in the wine cellar for seven years. We sat on the patio, took in the beautiful scenery, and sipped bubbles from a selection of their labels Haywire, Narrative, Free Form, and the newly launched Bizou + Yukon. It was such a great experience and was so nice to sit back, relax, and catch up with some friends!
While I was there I also picked up some bottles of wine including a couple of the Haywire Pink Bub which is one of my favs. I love sipping the bubbles on it’s own or using it to make a delicious cocktail like this Rosé Spritz. I hope you enjoy it as much as I do!

Rosé Spritz
Ingredients
- 1/2 glass Rosé bubbles or Rosé wine about 4 oz
- 1.5 oz Aperol approx. one shot
- 1.5 oz soda water approx. one shot
- 1.5 oz Honey Simple Syrup see recipe below
- Fresh fruit (options: slices of grapefruit, lemon, lime, raspberries)
Instructions
- Fill a glass with ice, pour simple syrup, Rosé, aperol, and soda over ice
- Gently stir, top with fresh fruit, and enjoy!
Honey Simple Syrup
- Mix 1 tbsp honey in 2 tbsp hot water until dissolved and allow to cool
