I love the holidays and I must admit that I also love a good martini!! There is something so magical about this time of year with all the fun parties, yummy treats and family time. I like to eat healthy but I tend to indulge a little more than normal over the holidays. Who can say no to all the tasty baking and chocolate that is around?? Not me! Life is all about balance and when I’m in need of a little pick me up I often make one of my espresso martinis.
This year I made some homemade vegan Baileys that was pretty delicious. It has less sugar, no preservatives and is dairy free. I used it in my espresso martini recipe and it was a huge success.
Espresso Martini Recipe
- 1 shot of espresso (cooled) or strong coffee
- 1.5 ounces of Baileys (see my homemade recipe below)
- .5 ounce of vodka
- Place all of the ingredients in a shaker cup over ice and shake well. Strain into a Martini glass and enjoy!!
*Note- It is important that your espresso is not hot or it will melt the ice and make your Martini watery. Place your espresso shot in the fridge or freezer until it cools before adding it to your shaker cup.
Homemade Vegan Baileys
- 3 cans regular coconut milk (light won’t be as thick and creamy)
- 3/4 cup espresso (or strong coffee)
- 1 cup Jameson Irish Wisky (or 3/4 cup of you don’t want it too strong)
- 1 tsp cinnamon
- 1 tsp vanilla
- 4- 6 tbsp maple syrup depending on how sweet you want it. Try starting with 4 add more as you go!
Place all ingredients in your blender and blend for 1 min.
*Note- I put my Baileys in a glass milk container I got from Michaels craft store but you can store it in any glass bottle you have. Also make sure that you shake the Baileys well before serving. The coconut milk tends to solidify a little so it is best to shake well before pouring!
